Cream of Pumpkin Soup

Meet the best pumpkin cream soup I've ever had 🧡

The soup contains three basic ingredients: pumpkin, feta and garlic and is prepared extremely simply and quickly. It takes longer to peel the pumpkin, sorry! The combination of feta (salty) with pumpkin (sweet) is amazing, you have to try it!

Ingredients for two servings:

  • 1 large pumpkin
  • ~100g feta cheese
  • 1 head of garlic
  • Olive oil
  • A few sprigs of thyme
  • 500ml boiled water + vegetable base
  • 2 slices of @michaelartisanbakery bread for croutons
  • Roasted pumpkin seeds for serving

Instructions:

  1. Clean and cut the pumpkin in half, remove the seeds, then cut it into equal 2-3 cm cubes.
  2. Place the pumpkin pieces in a ceramic tray, add feta and a clove of garlic with the tip cut off.
  3. Drizzle with olive oil, add the thyme sprigs and bake at 200°C for 25-30 minutes, until the pumpkin is tender.
  4. Meanwhile, prepare the vegetable soup and toast the bread slices for the croutons. I used @michaelartisanbakery bread taken out of the freezer and toasted in the toaster.
  5. After baking, mash the pumpkin with a fork, remove the skin of the roasted garlic and mix it with the feta.
  6. Place the mixture in a blender, gradually add the vegetable broth and blend until smooth. Adjust the consistency to your liking.
  7. Pour the soup into plates, sprinkle with toasted pumpkin seeds and serve with toasted bread croutons.
  8. Enjoy! It's a true royal delight!
